Right now we enjoying the snow and silence of a quiet Saturday. Fresh coffee, HGTV and staring out the window at the accumulating flakes.
We are a quiet family, just me the Babbah and the Dingo, relaxing on the porch, snuggled on the couch or doddling around the house. We both deal with best/worst of people all day long do we prefer less human contact when we are home. We dream of the day when we get to move to a large plot of land with no visible neighbors, in a big old antique house, surrounded by nothing but peace and quiet.
Yet the 2 out of the last 3 weeks we’ve entertained a group at our house. It was nice to show off all the work hubby has done on our home, the new projects in the works and all the good eats that come out of my (small) kitchen. But right now I am loving the forced slow down and shut in of the snow.
I treated myself to leftover Smoked Salmon Dip on a bagel with a creamy maple coffee this morning. The joys of leftovers from entertaining. This dip is so easy and quick – can be prepared a day or two before the party and great a few days after on crackers, bagels and by the spoonful. It is so easy to make – see the recipe below.
Two bowls (one mixing and one serving bowl for final product)
4-5 ounces of wild smoked salmon (I used Morey’s but I love Whole Foods fish counter too) https://www.moreys.com/products/smoked-fish/
1 wheel of Boursin Garlic & Herb Cheese
1/2 tub of whipped cream cheese
Juice of 1 lemon
2-3 tablespoons of fresh chopped dill (plus more for garnish)
3 tablespoons of fresh chopped chives (plus more for garnish)
1 tablespoon of Old Bay seasoning
1/2 tablespoon of salt and pepper
Rough chop/shred the salmon and combine all the ingredients in a mixing bowl (do not over mix, it should be “rustic” and you don’t want a gloppy mess)
Put into your serving bowl and decorate with fresh herbs
Serve with bagel chips, crackers, toast points or cucumber slices (for those low-carbers)
I hope your guests enjoy it and make sure you make enough for leftovers! It is lovely on a bagel or toast for breakfast or over crackers for a private cocktail hour.
